Why You Will Love This Recipe

Are you a taco lover like me? There is just something about fresh ingredients wrapped together in a soft or crunchy shell. We can get into the soft vs crunch debate in another post! But needless to say, tacos are amazing.

The amazing thing about tacos is that there are so many different combinations to choose from. Add fish, shrimp, chicken, pork, portobellos, peppers, or beef…the choices are endless.

If you are trying to keep your carb count low, you had to find a way to get creative with the meal. Recipes like this fish taco bowl or lettuce wraps seemed to be the only option. Those are great, but they definitely miss the mark on what a taco should be.

We have discovered a way to enjoy all the taco flavors without the high carbs that derail our diet.
